Is there still time to give you menu suggestions for Cinco de Mayo? I did not try any new recipes this year–my two sisters reign when it comes to preparing the best Mexican food in my family (well, a lot of food, really). I’m the eldest but I had the latest start in the kitchen. However, I have shared a few of my favorites here on the blog so I thought I would put them together here for you today. I’ve practically got breakfast, lunch and dinner covered here–you’re in charge of the margaritas.
This is one of the first recipes I shared here, inspired by a wonderful beachfront breakfast that I enjoyed while visiting Mexico in 2006. I put my own spin on this Mexican classic and it remains one of my favorites.
My sisters and my parents make the best salsas; there’s hardly ever a need to make my own. Here is just one of the many varieties I get to enjoy when my parents’ garden is abundant with homegrown tomatoes.
3. Carnitas Tacos with Mango-Avocado Salsa
This is my go-to carnitas recipe, inspired by my sister. When I am forced to make my own salsa, my Mango-Avocado version hits the spot.
4. Chicken and Spinach Enchiladas with Avocado-Lime Sauce
Feel free to omit the chicken in these enchiladas–I actually like the vegetarian version just a little more. My Avocado-Lime Sauce has also garnered positive feedback from a few readers–you might like it, too.
5. Fish Tacos with Mango-Tomatillo Salsa and Homemade Corn Tortillas
This is Mexican fare that I serve the most at home. It never disappoints.
