Ingredients
1cupall-purpose flour
1/4teaspoonbaking powder
1/8teaspoonsalt
1stick8 tablespoons unsalted butter
1/3cuplightly packed light brown sugar
1/4cupgranulated sugar
1egg
1 1/2cupsold fashioned oats
1cupblueberriesfresh or frozen
2/3cupchocolate chipssemisweet or dark, your choice
1teaspoonvanilla extract
Instructions
Preheat your oven to 350℉.
Melt the butter in a small saucepan over medium heat and cook, stirring occasionally, until the butter is medium brown. Turn off heat and set aside.
In a large bowl, combine the brown butter with both sugars and stir until well combined.
Add the egg and the vanilla extract and whisk until thick and smooth.
Sift the flour, baking powder and salt into the same bowl and stir again until well combined.
Fold in the oats and chocolate chips then fold in the blueberries.
Form into 1-2 inch balls (don't worry about making them perfect as it is a bit of work to work the blueberries in the dough) and set on a parchment-lined baking sheet. Depending on the size of your cookies, bake for 15-20 mins. Mine were about 1 1/2 inches in diameter and took 20 minutes.
Cool on a wire rack and enjoy. Will keep for a few days in an airtight container.
