Raisin Pecan Oatmeal Cookies

Using a little less sugar doesn't change the wholesome goodness of these cookies but using candied pecans doesn't hurt either.

Ingredients
- 1½ cups pecans, roughly chopped (I used ½ regular and ½ candied pecans)
- ½ pound (2 sticks) unsalted butter, room temperature
- ¾ cup dark brown sugar, lightly packed
- ¾ cup granulated sugar
- 3 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- 3 cups old-fashioned oatmeal
- 1½ cups golden raisins
Instructions
- Preheat the oven to 350 degrees F.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, brown sugar and granulated sugar together on medium-high speed until the mixture is light and fluffy. Turn the mixer down to low and add the vanilla and eggs (one at a time).
- In another bowl, sift together the flour, baking powder, cinnamon, and salt. Again, with the mixer on low, slowly add the dry ingredients to the butter mixture. Add the oats, raisins, and pecans and mix just until combined.
- Use a small ice-cream scoop to drop 2-inch mounds of dough onto sheet pans lined with parchment paper. Flatten slightly with a damp hand. Bake for 12 to 15 minutes, until lightly browned. Cool on a wire rack before enjoying

Sounds like a perfect quiet and relaxing valentines day! I bet these cookies were simply a perfect top off to the evening. Hubby and I relaxed too. I think that I need to make these cookies and love that you reduced the sugar a bit, so they have a bit of earthyness to them versus such a sweet treat. Hope you and hubby have a wonderful 3 day weekend ahead! 🙂

Your husband and mine could probably have an epic battle over the remote. lol. Me and hubs do the same, he actually gets upset if I’m up and running around everying evening (my preference) instead of sitting there where watching him watch t.v. I’m not sure I’d want to share either. Enjoy your next adventure. Sounds like a perfect V-day to me.
p.s. Please don’t thicken your skin, it’s absolutely perfect the way it is. I say the world has to change for me, not the other way around. Lol.

Can you come over to mi casa thousands of miles away, on the opposite Coast and share with me some of these delicious cookies? Pretty please? I like the addition of pecans to the oatmeal cookie. Nuts add depth to the already delish flavour of a cookie like this! Superb!

I want to have these cookies on the couch in front of fire place and relax…and call it a happy valentine’s day. 🙂 The crunchy outside is my type of cookies and these cookies are very appealing! I’d make good coffee to go with this. I haven’t had made cookies for a while and I would love to try… pecan is something that I don’t have in my pantry but I’m going to get some especially for this recipe.
