- Fresh tomatoes, chopped
- Onion, chopped
- Serrano and jalapeño chiles, chopped (one or the other or a combination of both, depending on your heat tolerance)
- Fresh lime juice
- Garlic, chopped
- Cilantro, chopped
- Garlic powder
- Kosher salt and freshly ground pepper, to taste
Today marked the end of my nephews’ and nieces’ visit. To say that I’m exhausted is a severe understatement but I had so much fun; I hope they did, too. It was an activity-packed last few days, ending with a barbecue/pool party with the rest of my family. I already miss the kids, though.
We had so much food–filets, hamburgers (Mom’s way), grilled corn, Mom’s chicken adobo, and my sister, Gail’s, pico de gallo, just to name a few. The last item is something I never make because both my sisters make such good versions. It also helps that my parents grow a large variety of tomatoes and herbs, making today’s salsa even more special.
I forgot to ask my parents what tomatoes they brought but boy, were they sweet! There’s really nothing like the flavor of homegrown tomatoes. Combined with the onions, peppers, garlic, lime and cilantro, we couldn’t get enough.
This is a simple salsa; the fresh ingredients are what make it so good. I can’t wait for my own tomato harvest so I can finally make this myself.

Oh, give me a bowl of that pico de gallo, some tortilla chips and a beer and I’ll be a happy girl! Even though I don’t do cilantro, so I’d make it with parsley instead, it’s just soooo temptingly beautiful!

Your pico de gallo looks so vibrant and packed with flavour – It does remind me of a tomato and onion salad we usually have with adobo – do you think this would go well with it as well with a bowl of steaming rice? yum….
