Tamarind Wings

Don't be afraid to get messy--these baked wings promise a lot of bold, Asian-inspired flavor.
Ingredients
  • 2 - 2½ pounds wings
  • ⅓ cup + 1 Tbsp tamarind concentrate
  • Juice of ½ lime
  • 1 tbsp Fish Sauce
  • 2 cloves crushed garlic
  • 1 tsp chili flakes
  • ⅓ cup oil
Instructions
  1. Rinse and pat dry the wings and set aside
  2. Combine the marinade ingredients from the tamarind to the oil in a bowl then pour in a storage bag along with the wings.
  3. Marinate in the refrigerator for at least several hours or up to two days.
  4. When you're ready to bake them, preheat your oven to 400 degrees F. Arrange the wing pieces on a baking sheet (I lined mine with nonstick foil) and brush with more of the marinade. Bake for 25 - 30 minutes until the wings are nicely browned and caramelized.
  5. Serve with lime wedges.
