- 3 1/2 cups puréed papaya (4-5 Hawaiian papayas)
- 1 cup carrot juice
- 1/4 – 1/2 cup sugar, depending on sweetness of the papayas
- 1 tablespoon fresh lime juice
- Combine the sugar and carrot juice in a small saucepan and heat until the sugar is dissolved.
- Add the puréed papaya and lime juice to the mixture.
- Pass through a sieve to remove any remaining solids and chill for a few hours.
- Process in ice cream maker according to manufacturer’s instructions.

I can’t think of a better combo than papaya and carrot! My daughter loves papayas and next time I will make this sorbet or in a smoothie form. Sounds light, delicious and so healthy!

I love papaya almost as much as I love Hawaii. I met Felice, from All That’s Left are the Crumbs when I visited last fall, what a treat. And Papaya in the island is always a treat… I purchased some beautiful papayas a few weeks ago and has absolutely NO taste… so disappointing.
Can’t wait to hear about your trip! And as for the sorbet… not something I would have put together, but I’m really intrigued. What a wonderful, healthy treat. Nicely done!

The rainbow papayas here in Hawaii are the best. The seeds also make a fantastic dressing that is really popular here too. The color of your sorbet is stunning and I can totally see these two flavors complimenting one another. This is just the kind of refreshment I need on a hot summers afternoon.

Oh papaya sorbet would have been wonderful already. The carrot addition is a little out of the box but they the best creations were made by thinking outside the box, right? I think I would personally love it!

I love eating papaya – in HAWAII! 🙂 What a beautiful way to celebrate your upcoming trip (or perhaps you’ve left already -lucky!). For some reason I never pick the good papayas when I buy them here and I’m always disappointed. I much prefer to be served fresh papaya with a lime wedge on the islands. LOL. Your sorbet looks so refreshing and I love the addition of carrots. I need to breakout my ice cream maker one of these days…
